Grilled Chicken Quinoa Bowl

Ingredients: 
  • 150 g grilled chickent breast(seasoned herbs)
  • 1 Cup cooked quinoa
  • 1 Cup steamed broccoli florets
  • 1/2 Avocado, slliced
  • 1/4 Cup roasted chickpeas
  • A handful of mixed greens(spinach, arugula)
  • 1 tbsp olive oil (for dressing)
  • 2 tbsp lemon juice (for dressing)
  • Salt and Pepper (to taste)
1. Cook the quinoa following the package instructions and set aside.
2. Grill the chicken breast seasoned with herbs until fully cooked.
3. Steam the broccoli florets until tender.
4. In a bowl, place the mixed greens at the bottom.
5. Add the cooked quinoa, grilled chicken, steamed broccoli, and sliced avocado on top of the greens.
6. Sprinkle the roasted chickpeas over the bowl.
7. Whisk together the lemon juice, olive oil, salt, and pepper, and drizzle over the bowl as a dressing.
